In the case of the University of Seville, they use a phased approach. That is to say, the first phase starts at the end of June. And the second phase at the end of September where the remaining places are offered.
Another example is the Universidad Autónoma de Madrid, which starts the process in mid-June.

Find out as much as possible about the study plan; this will allow you to organise yourself with regard to all the compulsory and optional subjects you will have to take during the course of your studies. This way, you won’t have any problems when it comes to completing the number of credits.
If you have any doubts, contact the guidance services; universities usually have guidance groups in their departments that will be able to provide you with all kinds of information.
What happens if I don’t enrol for a year?
In cases where you have not been able to enrol for a year, this unfortunately implies to the institution that you have irrevocably withdrawn your enrolment (this may depend on the institution). This is because you did not exercise your right to register for the corresponding enrolment.
In spite of this, there is a «late enrolment», whereby each university opens a period of time in which late enrolments who have not been able to register successfully can do so in the second phase of the registration process.
However, the process of enrolling latecomers may vary from institution to institution.
Even so, if a year has passed without you having enrolled, the main consequence is that the university will release the vacancy for another applicant to fill it.
